Coconut Chickpea Curry
COCONUT CHICKPEA CURRY
1 and 1/2 cups diced tomatoes (equal to 1 14-oz. can; drain before using)
1 bell pepper
1 tsp of curry powder
1/2 can of coconut milk use the fat part
4 cups of cooked garbanzo beans
Salt 🧂 pepper to taste
1. Add tomatoes 🍅, bell peppers, curry powder to a blender to make the sauce.
2. Add coconut milk slowly until it’s melted, then add the garbanzo beans.
3. Cook for 15-20 mins, serve over white rice.
