COCONUT CHICKPEA CURRY

  • 1 and 1/2 cups diced tomatoes (equal to 1 14-oz. can; drain before using)

  • 1 bell pepper

  • 1 tsp of curry powder

  • 1/2 can of coconut milk use the fat part 

  • 4 cups of cooked garbanzo beans 

  • Salt ๐Ÿง‚ pepper to taste 

DIRECTIONS:

1. Add tomatoes ๐Ÿ…, bell peppers, curry powder to a blender to make the sauce.

2. Add coconut milk slowly until itโ€™s melted, then add the garbanzo beans.

3. Cook for 15-20 mins, serve over white rice.
