Kale and Black Eyed Pea Soup

Happy Tuesday my loves,

When it gets cold out, I crave warm delicious soups. I made this super easy Kale and black-eyed peas soup using only a few ingredients. I  cook my beans with salt and water and freeze them, instead of buying canned beans.


EASY KALE AND BLACK-EYED PEA SOUP

 

INGREDIENTS:

  • 2 cups of cooked black-eyed peas
  • 3 cups of tomato sauce
  •  Kale
  • 1/2 tsp olive oil
  •  Salt and pepper to taste

DIRECTIONS:

  1. Unfreeze your beans
  2. Put tomato sauce in a pot with the beans and kale, cover and let it simmer for 15 mins in low heat. 
  3. Serve with rice and avocado
