Zucchini Noodles with Creamy Avocado Pesto Sauce and Shrimp
I wanted to share this super easy and delicious recipe I made for a local market. The zoodles (zucchini noodles ) came out so so creamy and the pesto sauce gives it a different touch. I used shrimp for this recipe, but any other protein source will go great with this dish.
ZUCCHINI NOODLES WITH CREAMY AVOCADO AND PESTO SAUCE AND SHRIMP
- 5-6 medium zucchini
- 1 pound raw shrimp
- 1 ripe avocado
- Cherry tomatoes
- 1 tablespoon of extra-virgin olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- The Marketplace house prepared pesto
1 .Using a spiral vegetable slicer or a vegetable peeler, cut zucchini lengthwise into long, thin strands or strips.
2. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add shrimp, garlic salt, and pepper stirring occasionally, until the shrimp is almost cooked through, 3 to 4 minutes.
3. Add the zucchini noodles and gently toss until hot, about 3 minutes. Transfer to the bowl, add the pesto, avocado and gently toss to combine.
