Blueberry and Reishi Breakfast Muffins

 BLUEBERRY AND REISHI MUFFINS 

 

INGREDIENTS

  • 1 cup of oat flour
  • 2 flax eggs
  • 1/3 cup of any non dairy milk
  • 2 tsp of Reishi Mushroom Powder
  • 1 tsp of Raw cacao
  • ½ teaspoon baking soda
  • 1 cup of blueberries 

DIRECTIONS

  1. Preheat oven to 375 degrees.
  2. Place ingredients in a high-speed blender and blend until all ingredients are combined. Add berries to the batter. 
  3. Pour batter into muffin tin greased with cooking spray or coconut oil.
  4. Bake for 15-20 minutes or until brown.
